New Yorkers never seem to tire of a good, classic French Bistro. The latest bar, Paris Bar, recently opened in the Le Meridien Hotel on West 57th Street. The 80-seat establishment marks Fireman Hospitality’s first entry into that category, but they did their homework, tapping chef Brando De Oliveira—a graduate of Paris’ Le Cordon Bleu and former chef at the iconic, star-studded Aureole Michelin – to oversee the kitchen. . It’s open for dinner nightly, plus brunch on the weekends, with menus featuring crowd-pleasers (Bistro Burger, Croque Monsieur, Salade Nicoise, Steak Frites, Moules Frites and Pate de Champagne) with a few surprises thrown in for good measure good.
